Kale & Quinoa Salad with Ricotta Salata – I linked this recently from another post, but it’s worth highlighting again. Super delicious and easy. I made it again recently and skipped the quinoa because I was feeling lazy. Still yummy! Also very forgiving of the “just throw in a big handful” method of salad making, if you are so inclined.
Mashed Chickpea Salad Sandwich – A very yummy lunch, highly recommend this as a pita filling, or on your choice of hearty bread. Way better than egg salad.
Garlicky Potato & Baby Spinach Gratin – I made this when I was overwhelmed with greens the week my CSA started. I used regular spinach, which gave off a lot of water in the baking. Not sure if there’s a way around that for this recipe. This was decent but I’m not sure I’ll make it again. Oh, and also – I doubled it, but it was still a very skinny layer in a 9×13 pan, which is the closest I have to 8×12. You can probably make this in an 8×8 or 9×9 without a problem.
Stir Fried Bok Choy and Mizuna with Tofu – Delicious! But I missed the bok choy. I omitted it as I didn’t have any and wasn’t about to buy more greens. I’d briefly thought about using some kale instead and wish I had – this was tasty but needed that additional greenery. Also, this is a great way to cook tofu.
